The dates on which Good Friday and Easter Sunday fall are determined according to the ecclesiastical moon. That varies each year but they fall at some point between late March and late April.
In South Africa, whenever any public holiday falls on a Sunday, the Monday following on it, is a public holiday.
Keep in mind that flight fares on dates directly before or after these holidays can also still be fairly high. Also, numerous South African’s commute to work i.e. they will live in Cape Town or Durban on weekends and then fly up to Johannesburg for work Monday to Thursday or Friday. This means that generally early Monday morning flights and late afternoon Thursday or Friday flights may come at a premium too.
